Butter Chicken Meatball recipe

Serves: 4-6 meals

Cook time: 30 mins


My whole family enjoys this recipe it is easy to make and doesn't take a lot of time.... you don't have to add the lentils but it helps to make the mince go further.


Meatballs:

500gms beef mince

2 dessertspoons Charmaine Solomon's Butter chicken marinade

200gms brown lentils (optional)

1 dessertspoon of fine breadcrumbs

1 tablespoon oil


Sauce:

1 small onion sliced finely

1 400gm can diced tomatoes

1 teaspoon brown sugar

1 dessertspoon Charmaine Solomon's Butter Chicken marinade

1/4 teaspoon salt


Instructions:

Mix beef mince, lentils, Charmaine Solomon's Butter Chicken curry marinade and fine breadcrumbs together. Allow to marinade for 10 minutes then roll into bite sized balls.

Fry in frypan until brown on all sides.


Sauce:

Add onions to saucepan with small amount of oil, fry until translucent.

Add can of diced tomatoes, sugar, Charmaine Solomon's Butter Chicken marinade along with salt and allow to simmer until the onion is tender and the sauce has reduced a little.


Add the sauce to the meatballs in the frypan and allow to continue cooking until the meatballs ate cooked.

Serve with rice, mashed potatoes, green vegetables and crusty bread.....to soak up the sauce!!
